Biography

Jodie is a Research Assistant at the Novo Nordisk Centre for Basic Metabolic Research, University of Copenhagen, Denmark. She completed a Master of Science, MSc, (Candi.Sci.), in Human Nutrition from the University of Copenhagen in 2020. Her Master’s thesis focused on the effects of Time-restricted Eating and Intermittent Fasting on the Gut Microbiome.

Jodie was born in Plymouth, in the United Kingdom and has travelled extensively, living in five different countries. Passionate about health and nutrition, Jodie is also a qualified Pilates Teacher, Personal Trainer and Group Fitness Instructor, and has been teaching within this field since 2014.

She is currently responsible for designing the diet and nutrition profiles for both the FEASST and the epiRABBIT studies, in addition to conducting physical clinical assessments on human participants in FEASST, together with project coordination
